Beef and bean stew

Introduction

Like All Day Beef Stew, but I subbed out the wild rice and almonds and used less beef. I added potatoes and dry beans to boost protein and fiber. I had a hard time finding a decently priced piece of meat at the store. The original recipe uses2 lbs. of round steak. I used 1.5 lbs chuck steak for this. Number of Servings: 12

Ingredients

    1 cup of Goya 16 bean soup mix
    1 cup chopped carrots
    1 cup chopped celery
    1 cup chopped onion
    1 teaspoon garlic powder
    2.5 teaspoons seasoned salt
    2.5 Knorr beef bouillon cubes, the larger cubes
    1.5 lbs. chuck steak, cut into cubes, trimmed of all visible fat
    3 medium red potatoes, peeled and cut into cubes
    Boiling water to fill the pot

Directions

Rinse beans and place in a saucepan, cover with water. Bring to a boil. Place a lid on the pan and turn off the stove. Let the beans sit while you assemble and chop the rest of your ingredients.

Layer the ingredients into the crockpot in the order given. Do not stir. Place lid on crockpot. Set on low for 6-8 hours.

Serving Size: Makes 12 servings about 1 cup each
