Introduction

I made this recipe straight out of a book and it's more like a goulash than a soup, but it's very tasty! You can lighten it up by using turkey instead of beef and enhance the pasta experience by using whole wheat pasta! You can lighten it up by using turkey instead of beef and enhance the pasta experience by using whole wheat pasta!
Number of Servings: 6

Ingredients

    1 to 1.5 pounds of ground beef or turkey
    1 10oz package of frozen mixed vegetables
    1 28oz can of diced or crushed tomatoes, undrained
    1 can of beef consumme or beef broth
    1.5 cups of macaroni pasta- dry
    water
    salt/pepper/garlic to taste
    (I also like a little cayenne pepper too!)

Directions

Brown meat and drain off grease. In a soup pot, combine all ingredients. Add water to make the soup a desired consistency- more water for soup, less water for more of a goulash. Bring to a boil. Reduce heat to medium and cook until pasta and vegetables are done!
