IntroductionThis recipe makes a delicious, fluffy pancake that is a good breakfast entree which also meets my Type 2 Diabetes eating program. This recipe makes a delicious, fluffy pancake that is a good breakfast entree which also meets my Type 2 Diabetes eating program.
1 large egg
1 teaspoon maple syrup
1 teaspoon canola oil
1 tablespoon plus 1 teaspoon white flour
3/4 teaspoon baking powder
Sprinkling of cinnamon or nutmeg
Dash of salt
1/3 cup of fat-free ricotta cheese
Pour into pre-heated, oiled cast iron or heavy skillet. When bubbles appear, flip. Cook a minute or less and place on plate.
Top with natural applesauce, jam or other topping.
You can substitute 1/4 tsp vanilla for the maple syrup.
Serving Size: Makes two pancakes
