Sweet and Sour Sauce; No Soy, No added Sugar

Ingredients

1/2 onion, finely diced
2 tsp crushed garlic
1 tbsp butter
5 tbsp coconut aminos, (or soy sauce)
1/2 cup apple cider vinegar
1 540 ml can of pineapple chunks in pineapple juice
1/3 cup STEVIVA blend
1 tbsp molasses
2 tbsp arrowroot flour (dissolved in a small bit of cold water)
Directions
In a medium saucepan, heat butter and cook onion until translucent. Add garlic.
In a measuring cup, (preferrably a 2 cup clear) measure in vinegar & coconut aminos. Add enough liquid (the pineapple juice in the can from the chunks of pineapple) to make 1 1/2 cups of liquid. If necessary, top off with water.
Add to onions and garlic.
Add steviva blend. Turn up to medium high heat and allow the sweetener to dissolve. Add molasses.
Add arrowroot and stirring constantly until sauce becomes thick. Add pineapple chunks.
Serves over chicken or pork.
