Ingredients

1 small head of fresh, red Cabbage (664 grams) (1 lb 6 oz)
3 large fresh Carrots (295 grams or 10.5 oz)
1/2 fresh Red Onion (198 gram or 7 oz)
1 cup of Raisins
1/2 cup Apple Cider Vinegar
6 Splenda Packets (2 tbls)
1/4 teaspoon fresh Ground or Cracked Black Pepper
1/2 teaspoon Salt
Directions
Cut the cabbage, carrots and red onion into tiny shreds or run through the grater blade of a food processor.
Place these finely chopped vegetables into a large bowl, add the raisins and toss together.
In a small bowl or 1 cup measure stir the vinegar, Splenda, pepper and salt together until Splenda is dissolved. Pour over the vegetables and coat well. Cover and let sit at least 1 hour in refrigerator to incorporate flavors.
Serving Size: Makes Eight 1-cup (180 grams) servings
