IntroductionThis is so easy and quick to make! I do not use the seasoning packet in the ramen noodles so the sodium content is not as high as shown. This is so easy and quick to make! I do not use the seasoning packet in the ramen noodles so the sodium content is not as high as shown.
1 pkg chicken flavored Ramen noodles
l large chicken breast, cooked and sliced
1 red pepper seeded and chopped
1/2 cup chopped onion
1/2 cup sliced mushrooms
2 T creamy peanut butter
1 T low sodium soy sauce
1 T rice vinegar
1/2 tsp finely chopped jalapeno or 1/4 tsp red pepper flakes
Whisk together peanut butter, soy sauce, vinegar and pepper flakes if using.
Drain noodles and peppers, setting aside 1/2 c water. Place noodle mixture, add chicken, and toss with peanut sauce. Add water as needed to thin sauce. Makes 2 servings.
