Baked Stuffed Squash

Ingredients

1 acorn or other small winter squash
2 T cooked brown rice
1-1/2 slices center cut bacon, diced
1/4 c fresh spinach
1 oz bell pepper, diced
1 T red onion, diced
1 tsp olive oil
1-1/2 tsp brown sugar
Directions
Preheat oven to 400F.
Add oil to a skillet over medium heat and cook onions, spinach, and pepper for about 5 to 7 minutes. Remove from heat and put into a small bowl.
Place skillet back on heat and cook diced bacon until desired crispness. Drain on paper towels. Add to bowl.
Add brown rice to bowl and your choice of seasoning such as rosemary, thyme, basil, pepper, etc, as well as brown sugar. Mix thoroughly.
Cut top off of squash and scoop out seeds. Fill cavity with rice mixture and place top back on. If squash will not stay upright on its own, fashion a cradle from aluminum foil to hold it upright on a cookie sheet lined with more foil for easy clean-up.
Bake for one hour until squash is tender.
