Introduction

Soft, luscious, tasty, low carb, low cal, high protein, power breakfast or lunch. This is a nice change to plain eggs. I often use 3 egg whites or egg substitute instead of the one whole egg. Ingredients

    Ingredients:
    1 T chopped Onion
    1 large Egg, fresh, (can use egg white)
    2 additional Egg whites
    2 T Parmesan Cheese, grated
    2 T Half and Half Cream
    2 dashes Garlic powder
    1/4 tsp or to taste black Pepper
    1/4 tsp dried or to taste Parsley, dried
    1/4 cup or so fresh Spinach, fresh
    Salt, to taste
    1 T butter

Directions

Add butter to warm small non stick fry pan.
Add chopped eggs. Fry until carmelized or translucent.
Add spinach and wilt on low heat.
Mix eggs, cream, spices together very well.
Add to wilted spinach, onion mixture. Sprinkle Parmesean cheese over eggs. Keep temp on pan fairly medium to low.
Soft cook eggs until desired doneness.
Serve immediately.
