Italian Round Steak

Introduction

Adapted from the Biggest Loser 30-Day Jump Start Recipe for Italian Flank Steak with Tomatoes. The original recipe calls for flank steak and for 8 Roma tomatoes. Number of Servings: 4

Ingredients

    1/4 cup water
    1/4 cup balsamic vinegar
    1 teaspoon dried basil (1 tblsp if fresh)
    1 teaspoon dried thyme (1 tblsp of fresh)
    1 tablespoon chopped garlic
    1 teaspoon dried mustard
    1/2 teaspoon ground black pepper
    1-1/4 pounds of round steak

Directions

Combine water, vinegar, garlic, basil, thyme, mustard and pepper in a large zip-top plastic bag. Add the steak and seal. Marinate in refrigerator for at least 2 hours (but no longer than 12), turning occasionally.

Preheat grill. Coat grill rack with olive oil cooking spray.

Remove the steak from the marinade and blot to remove excess moisture.

Grill until browned 2-3 minutes on each side. Be sure to watch steaks carefully and turn often as balsamic vinegar can cause it to burn if not blotted properly and because eye steaks are very thin.
