Cucumber, tomato, onion, green pepper vinaigrette

Introduction

A nice fresh tasting salad. A nice fresh tasting salad.
Number of Servings: 3

Ingredients

    1 cucumber, peeled and cut into slices
    1 medium ripe tomato, cut into chunks
    1/3 red onion, chopped
    1/2 green bell pepper, chopped
    rice vinegar to cover
    salt and pepper to taste
    1 teaspoon of olive oil
    water to taste

Directions

Toss all ingredients together and let marinate for at least 1/2 hour before serving. Remember to add water and seasonings to your taste.
