Simple Dairy and Egg Free Sweet Cornbread

Submitted by: KIMBERLEIGH06

Introduction

My husband and I actively avoid dairy and eggs. I am from the South, and sometimes I just gotta have one of my favorite old food staples, but now modified to accommodate our new eating habits. Number of Servings: 8

Ingredients

    *Flour, white, 1 cup
    Yellow Cornmeal, 1 cup
    Baking Powder, 1 tsp
    Salt, 1/2 tsp
*Silk Organic Original Soy Milk, 1.25 cup
*Earth Balance Natural Buttery Spread, 4 tbsp, melted
    Honey, 3 tbsp
*Crisco Pure Vegetable Oil, 1 tbsp

Directions

Preheat oven to 400. Mix all dry ingredients together. Add all wet ingredients except oil. Mix well, but don't over-mix. Pour the oil into one of those aluminum baking pans - the small oblong, rectangular ones so that when it's done it looks like a little loaf of bread. Now, pour in the batter on top of the oil. Bake for 30-40 minutes or until center comes out clean when poked with a wooden kabob skewer (or knife, whatever). Let cool and serve with black eyed peas and baked zucchini spears!

Serving Size: Makes 8 slices
