CZ's Healthy Chicken Taco Salad

A tasty combination of salsa, seasoned chicken and salad A tasty combination of salsa, seasoned chicken and salad
Number of Servings: 2

Ingredients

    2 boneless chicken breasts with no skin, diced
    1 tsp salt
    dash of black pepper
    3 tsp taco seasoning mix (40% less sodium)
    1 tsp water
    6 romaine lettuce leaves, coarsely chopped
    0.5 cup salsa
    0.5 cup shredded low fat colby or cheddar cheese
    3 Tbsp Light Ranch Salad Dressing

Directions

Makes 2 servings

season diced chicken breast pieces with salt and pepper. Saute in small skillet until chicken is fully cooked. Add taco seasoning mix and 1 tsp of water. simmer for 5 minutes.

To serve, place chopped lettuce on two (2) plates. Top with salsa, cheese, and prepared chicken. drizzle ranch dressing over salad. Enjoy!
