Shrimp & Spinach Alfredo Sauce w/ Mushrooms (Low Carb)

Introduction

I modified this from a fav recipe of mine to make it more protein and veggie intensive. Serve over Spaghetti Squash. I modified this from a fav recipe of mine to make it more protein and veggie intensive. Serve over Spaghetti Squash.
Number of Servings: 5

Ingredients

    2 cups (16 oz) medium Shrimp
    1 cup (8oz) Philadelphia Neufchatel cream cheese
    1 cup (8oz) Chicken Broth
    1 bunch fresh Spinach
    1 cup (8oz) fresh Mushrooms
    1 cup Parmesan Cheese, grated
    2 cloves Garlic
    Salt & Pepper, to taste

Directions

Heat in large skillet, cream cheese and chicken broth, stir 3-4 minutes until cream cheese is melted and mixture blended well.

Add parmesan, garlic and salt & pepper to taste.

Add Shrimp and stil until cooked thru (if using frozen shrimp, until heated thru). Add spinach and stir well.

For low carb, serve over spaghetti squash.

Serving Size: 5-6 servings
