Directions

Spray pot with non-stick cooking spray.
Place pork on bottom of pot, any fat on the upside.
Slice a gash into your piece of pork horizontally.
With the top of the pork held up, pour in your lemon juice, followed by your minced garlic, close pork back up.
Pour water in pot.
Sprinkle black pepper, onion powder and Allspice over pork.
Drizzle soy sauce over pork.
Cover and set on Low - let go for a few hours.
About 4 hours or so before you are ready to eat, add the rest of the ingredients.
Using about 1/3 of the can of diced chilies, pour the juice over the pork and lay the chilies over the pork, pressing them into the meat slightly.
Drain and add 1 cup white beans.
Drain and add 1 cup of corn.
Wash/scrub your potatoes, cut into aproximately one inch chunks and add to water around pork, ensuring they all get pushed down into the mixture at least once.
Add remaining 2/3 of diced chilies all over contents of the pot.
Cover again and let go until serving time.

Come serving time, you may either break up the pork with a couple of forks or use an electric mixer to shred.
