Introduction

Number of Servings: 4

Ingredients

    * Mushrooms, fresh, 2 cup, pieces or slices
    * Spinach, fresh, 1 package (10 oz)
    * Onions, raw, 2 cup, chopped
    * Garlic, 3 cloves
    * One Can of Italian style diced tomatoes
    * *Whole Wheat Penne (dry), 8 oz
    * Salt, 1 tsp
    * Pepper, black, 1 tsp
    * Red Pepper, optional
    * *Precious Brand Low Fat Ricotta Cheese, .5 cup

Directions

Cook the pasta in boiling water until al dente.

Warm up the olive oil in a pan then add the onions and garlic and cook until soft. Add mushrooms, Diced tomatoes, spinach, and seasonings and cook until mushrooms release their liquid and spinach is wilted.

Mix in the cooked pasta until completely coated with sauce. Put into four separate bowls then add 3 TBS of Riccotta cheese to each bowl and serve.

Serving Size: Makes 4 servings
