Claire's Chicken Soup with Wild Rice

I like this soup because it's very thick after you let the rice cook for a long time. It's also low-calorie, low-fat and low in carbohydrates, so you can still have crackers with your soup if you like. Number of Servings: 6

Ingredients

    1 Boneless, skinless chicken breast, cut-up (from a 2 lb pkg of 3)
    1 Tbls Olive Oil
    1 Large Carrot, minced
    1 Celery Stalk, minced
    1 Clove Garlic, minced
    1/8 Cup Chopped Onion
    1 Box Chicken Broth (approx. 16 oz)
    2 Boxes (from broth) Water
    2 Chicken Bouillon Cubes
    1 Cup Wild Rice
    Pepper to taste.

Directions

Wash and cut chicken into bite-sized pieces. Prepare carrot, celery, onion and garlic. Saute' veggies until desired tenderness. Add chicken and saute' until done. Add broth, water, and bouillon cubes. Heat until boiling. Add rice and pepper. Simmer on stove for about an hour. Rice will expand.

Serving Size: Makes about 6 1-cup servings
