Carrot cupcakes

Ingredients

    1 cup (250ml ) vegetable oil
    11/3 cups (300g) firmly packed brown sugar
    3 large eggs
    3 cups firmly packed grated carrot
    100g sultanas
    21/2 cups (375g) self-raising flour
    1/2 tsp baking soda
    2 tsp mixed spice

Directions

Preheat a fan forced oven to 160 degrees celcius (or 180 normal bake). LIne muffin pans with paper cases.
Beat oil, sugar & eggs in a large bowl with an electric beater until thick. Add the carrots, sultanas & dry ingredients.
Place 1/4 cups of the mixture into the paper cases. Bake for 22 minutes. Stand 5 mins before cooling on a wire rack. Ice with cream cheese icing.

Serving Size: makes 30 cupcakes
