Hominy Casserole



Introduction

Certainly not lowcal, but if served as a main course with a few side veggies, this makes a satisfying meal. Certainly not lowcal, but if served as a main course with a few side veggies, this makes a satisfying meal.
Number of Servings: 4

Ingredients

    2 cans hominy, drained
    1 can cream of something soup
    1 onion
    1 bell pepper
    1 Tb butter
    1 Jalapeno pepper
    1/2 c grated pepper jack cheese
    1 c frozen white corn, thawed
    1/2 c. grated Colby or cheddar cheese
    Salt and pepper to taste

Directions

Cook onion and bell pepper in butter. Add to hominy and cream of something soup. Add jalapeno pepper and pepper jack cheese. Add 1 cup corn, thawed. Mix thoroughly. Top with Colby (or cheddar) cheese and bake 30 minutes at 350 degrees.
