curry paste or powder Vegetable stalk garlic four cloves chopped 2 cans of chopped or diced chilies 3 cans of whole potatoes 1/2 cup coconut milk olive oil 2 packs of stew meat or stir fry meat 2 cans of chunky mushrooms 1 bunch of scallans 1/4 chopped white onion ginger root sliced or chopped about 1 clove worth
heat olive oil in dutch oven, saute onion ,garlic cloves,scallans,ginger. Drain chilies (if canned ) and stir in.mix in desired amount of curry paste. Cook for about 5 min on medium LOW. Add beef and brown it. When it has browned add 1 whole carton of vegetable stalk. Turn the heat down and let it simmer. Add coconut milk and mushrooms. Let cook on low covered and stirring occasionaly. Add drained canned potatoes ( you may want to chop them up a bit) an hour before serving or if you put in a crock pot add but leave on low.
