Swiss Chard with raisins and pinenuts

Introduction

This is nice as a side dish (serves 4) but we also like it as an entree--toss with 2 cups of whole wheat penne pasta and don't forget to count the past and 2 servings of the chard. Ingredients

    2 tablespoons pine nuts
    1 tablespoon extra virgin olive oil
    1 large onion, coarsely chopped
    1 bunch swiss chard, about a pound, washed, leave and stalks separated, stalks finely chopped and leaves torn into 2" pieces
    2 tablespoons golden raisins
    2 tablespoons balsamic vinegar
    1/4 teaspoon salt
    ground black pepper to taste

Directions

Toast pine nuts until golden brown and set aside to cool.

In a deep skillet or dutch oven heat the olive oil over medium-low heat, add the onions and cook them until golden brown and very soft, about 10 minutes.

Add chopped chard stalks and raisins to ions and cook stirring occasionally,.until the stalks are tender, about 10-15 minutes,

Add the leaves and vinegar, toss well to coat everything. Cook until leaves are wilted, about 5 minutes. Season with salt and pepper. Top with the pine nuts.

Serving Size: 4 servings as a side dish, two as a main course
