Submitted by: GIRANIMAL

Introduction

Based on Living Without's Budget Breakfast Bars. Mine did not hold together, but it made super-yummy granola anyway. Based on Living Without's Budget Breakfast Bars. Mine did not hold together, but it made super-yummy granola anyway.
Number of Servings: 28

Ingredients

3 cups Bob's Red Mill Gluten Free Rolled Oats
1 cup shredded raw coconut (preferably unsweetened)
    1/2 cup slivered almonds
1/2 cup raw pepitas (green pumpkin seeds)
    1/3 cup raisins
    1/3 cup dried cranberries
    1/4 cup pitted dates, chopped
    1/3 dried goji berries
    1/4 cup raw cacao nibs
    1/8 cup whole flaxseed
    1/2 tsp. sea salt
1/2 cup honey or agave nectar
    1/4 cup canola oil
1/4 cup milk alternative of choice (almond, rice, etc.)

Tips

Calculated at 1/4-cup servings.

Directions

Preheat oven to 350 degrees. Combine all dry ingredients except cacao nibs and flaxseed in very large bowl. Combine oil, honey and milk in separate small bowl (or right in a liquid measuring cup) and pour over dry ingredients. Mix thoroughly to moisten. Pour into greased 13x9 pan or large cookie sheet and bake 20 minutes. Remove, stir with fork and return to oven for another 10-15 minutes or until golden. (The granola will still feel moist but will dry some as it sits.) Remove pan from oven and add cacao and flaxseed (you want to keep them raw to preserve their antioxidant properties). Cool completely, stirring a few times to prevent sticking to pan, before storing in airtight container.

Serving Size: 24 servings
