Any Vegetable Soup

Introduction

Yum. Yum.
Number of Servings: 6

Ingredients

    Carrots, raw, 4 medium
    Celery, raw, 4 stalk, medium (7-1/2" - 8" long)
    Onions, raw, 1 medium (2-1/2" dia)
    Spinach, fresh, 2 cup (remove)
    Crushed Tomato Sprouts Natural 4 cups (one whole large can
    Leeks, 1 leek
    Garlic, 3 cloves
    Ancient Harvest, Quinoa Pasta, 2oz dry, 2 serving
    Olive Oil, .25 cup
    Water (I used probably 2 cups)

Directions

I sliced everything up in my food processor (besides tomatoes and pasta:)), sauteed in large pot with olive oil, salt, pepper, and any other spices that sounded good (thyme, oregano, etc), added tomatoes, pasta, and then enough water to get the thickness I wanted.
Cooked over a simmering heat for about 45 minutes and the veggies were still a little crunchy (which I like).


Serving Size: Makes 6 large bowl servings
