Quick Squash Bisque

Introduction

Ingredients

    1 small acorn squash, steamed
    1 small butternut squash, steamed

    Peel the squash and put in a blender. You can also just buy chunks of squash or can-o-pumpkin, but I find it less expensive this way.

    1 can (10.75 oz) chicken broth
    1/2 c lowfat milk

    Spice/season to taste

Directions

Blend the four main ingredients, season to taste. I used ginger, salt, pepper, orange zest, nutmeg and allspice.

Bring to a simmer, check seasonings and consistency, and voila it is a bisque.

Serving Size: Makes 4 8-oz portions
