Introduction

Number of Servings: 8

Ingredients

    *1 pound (about 2 cups) of dried beans (I used navy beans)

    *0.75 cup (or 6 ounces) of one of the following: salt pork, fresh pork, ham, diced bacon or small ham hock (I used Jeanie-O's Extra Lean Turkey Ham)

    *0.25 cup chopped onion

    *6-8 cups water

    *0.13 teaspoon black pepper (one-eighth teaspoon)

    *salt to tast (I used 0.25 teaspoon Morton's Lite Salt Mixture)

    *0.25 cup diced carrots

Directions

Soak beans overnight or quick soak. Rinse and add water, diced pork, onion, carrots and seasoning. Cover. Bring to a boil, then simmer two to three hours or until tender and liquid is well thickened.

Serve with cornbread, whole grain crackers, or over brown rice.
