Issa's Veggie Beef Soup

Introduction

Hearty veggie beef soup for a cold day! Hearty veggie beef soup for a cold day!
Number of Servings: 6

Ingredients

    1 Can tomato paste
    1 can green beans
    1 can white corn
    1 can green peas
    1 can lima beans
    1 can okra
    1 can whole white potatoes
    4 cups chopped tomatoes (fresh or frozen)
    20 baby carrots
    1 medium stock celery
    1/2 medium onion
    1 lb. beef chuck (stew beef)
    1/4 heaping Tsp. cayenne pepper
    ground black pepper to taste

Directions

I put my beef and onion in the bottom of a large soup pot and start it to browning grinding black pepper over it as it cooks. After cooking about 5 minutes I stir in the tomato paste and allow to cook another 5 minutes. I rinse all canned items and drain and add water to each can. I add in each can 1 at a time. I then stir in the chopped tomatoes and add celery and carrots. I add more ground black pepper and the heaping 1/4 Tsp. of cayenne pepper. I cook for at least an hour, but like to let it simmer all day to blend flavors. Serve hot.
