1 Lime, zested and cut in half
1/3 cup Chicken Broth
2 tbsp Peanut Butter, chunk style
2 Tbsp Waldon Farm no cal peanut butter
1 tbsp Soy Sauce
1 tbsp fresh Ginger Root
1 tbsp Sesame Oil
2 tspn Olive Oil
2 Carrots, peeled and thinly slice diagonally
3 cups (750 ml)Bok Choycoarsely chopped (2/3 larg bok choy or 3 small)
227 grams Shrimp, uncooked thawed
1/2 cup(125 ml) lightly packed fresh cilantro
4 pkgs shirataki noodles
Heat the oil in a large, non-stick skillet set over medium high heat. Add the carrots, stir-fry for 3 to 4 min. Add the bok choy and shrimp, stir-fry for 2 min or until shrimp are opague and vegetables are tender -crisp. Stir in the peanit butter mixture and cilantro. Toss until heated thoruugh.
Meanwhile, cook the noodels according to package directions, toss remaining seasame oil. Serve the stir-fry over the noodles. Garnish with reserved lime wedges, if desired.
