Mediteranian Chicken

Introduction

I prepared this one day when we had lost our power and had to use the generator. The microwave worked and the chicken turned out delicious.
I served it with sweet potato and broccoli also cooked in the microwave.

Number of Servings: 4

Ingredients

    2 chicken breasts, split, skinned and boned
    1 TBS cornstarch
    2 TBS Brown Sugar (packed)
    1/4 tsp oregano
    1 clove garlic, crushed
    2 TBS cooking oil
    1/4 cup worcestershire sauce
    1/4 cup sherry or wine of choice
    1/3 cup seedless raisins

Directions

Pierce chicken breasts with cooking fork. Arrange in a 3-qt. casserole.
In small bowl combine cornstarch, brown sugar, oregano, garlic, oil, worcestershire sauce, sherry (or wine) and raisins.
Pour over chicken. Cover. Microwave at High 11 or 13 minutes, rotating dish 1/2 turn after 6 minutes.
Serve with couscous or rice if desired.

Serving Size: makes 4 4-oz pieces of chicken with sauce.
