Honestly, one of the best snacks I've ever wrapped my lips around! I do this with hominy sometimes too!*The key to a good fry is to make sure the chickpeas are DRY when they go into the skillet. Honestly, one of the best snacks I've ever wrapped my lips around! I do this with hominy sometimes too!

Ingredients

1 can chickpeas (garbanzo beans) drained, rinsed, and dry.
2t. olive oil
2t. lemon zest
3t. kosher salt
1t. paprika
Directions
Heat olive oil in flat skillet. (Make sure skillet is large enough for chickpeas to lay flat during cooking. If they bunch up they tend to steam rather than fry.)
Add drained chickpeas to hot oil and pan fry until they start getting slightly brown and crispy.
Toss with salt, lemon zest, and paprika.
Serve while warm and crispy.
You can try to store them in an airtight container but they lose their crisp quickly. Best to eat them all at once!!
