Introduction

Meaty pasta sauce spiked with veggies. Great for the winter. You can skimp on the simmer time, but you really need at least 30 minutes of simmering. Meaty pasta sauce spiked with veggies. Great for the winter. You can skimp on the simmer time, but you really need at least 30 minutes of simmering.
Number of Servings: 10

Ingredients

    2 Tbsp butter
    1 yellow onion finely chopped
    2 carrots chopped into 1/4 inch pieces
    2 celery stocks chopped into 1/4 inch pieces
    1.5 pounds ground bee
    1.5 cups white wine (recipe assumes cooking wine, which adds sodium)
    1 cup low fat milk
    .5 tsp ground nutmeg
    2 quarts stewed or crushed tomatoes

Directions

Sautee onion, carrots, and celery in butter until onions and celery are soft.
Add ground beef and cook until browned
Add wine and cook until mostly evaporated
Add milk and nutmeg and cook until mostly evaporated
Add tomatoes and simmer for 4 hours, adding water 1/2 cup at a time as necessary.

Serving Size: Makes 10 .5 cup servings
