Introduction

There are many variations for this hearty kale soup. I prefer to not add the traditional potatoes or tomatoes found in many versions. There are many variations for this hearty kale soup. I prefer to not add the traditional potatoes or tomatoes found in many versions.
Number of Servings: 10

Ingredients

    1 beef soup bone
    3 chopped onions
    1 minced clove garlic
    1 stick Portuguese chourico, chopped
    A bunch of kale, stems removed and chopped
    1 small head of cabbage, chopped
    2 1/2 quarts low sodium beef broth
    1 can red kidney beans, rinsed and drained
    salt & pepper to taste

Directions

Combine all ingredients EXCEPT kidney beans in a large soup pot. Bring to a boil then cover and simmer for at least 3 hours. Add more water or broth if needed. Remove beef bones and chop the meat and return to the pot with the can of kidney beans. Salt and pepper to taste. Heat through and serve.

Serving Size: Makes 10 good size bowls of soup
