Introduction

Ingredients

    2 Tbsp. Olive or veg. oil
    2Tbsp. chopped onion
    14 baby carrots, chopped
    3 cups low sodicum chicken broth
    1 can reduced sodium garbanzo beans
    1/4 to 1/3 cup each frozen corn and peas
    2 Roma tomatos, chopped
    1 cup fresh torn spinach
    2 cups cooked quinoa shell pasta

Directions

add onion and carrots to oil, cook till onions are brown, add broth, when hot, add frozen vegetables, pasta and beans, then add chopped tomato and in last 10 minutes add fresh spinach.

We topped with 1/4 cup fresh roasted pumpkin seeds and a teaspoon of shredded parmesan

Serving Size: 3 - 1 1/2 cup servings
