Crumbly Baked Crab Cakes

Introduction

These crab cakes were so good, I almost ate all 6 of them. These are an awesome alternative to fried crab cakes. Amazingly low calorie, light tasting, super crumbly but with full crab cake flavor. Only about 120 calories each. These crab cakes were so good, I almost ate all 6 of them. These are an awesome alternative to fried crab cakes. Ingredients

    6 sticks of imitation crab meat
    18 wheat saltine crackers, crushed
    3 stalks green onion (scallion) finely chopped, including white parts, except the stringy roots
    2 tbsp Earth Balance Buttery Spread
    3 small stalks finely chopped celery
    1 tsp worchestershire sauce
    1/4 tsp salt
    1/2 tsp garlic (fresh minced in the can)

Directions

Preheat oven to 350. In a food processor, process crab meat until it's finely chopped. Slightly melt butter in the microwave (about 10 seconds). Mix all ingredients together in a bowl with your hands. On a well greased cookie sheet (I just spray on a lot of nonstick spray), shape handfuls of the mixture and shape into round patties and flatten. Bake for 20-25 minutes, or until tops slightly brown. Crab cakes will be flaky and soft, unlike fried ones.

Makes 6 cakes, only about 120 calories each!

Serve with prepared horseradish, spicy Sriracha sauce, tartar sauce or cocktail sauce.
