4 Light Multigrain English Muffins
4 Large Fresh Eggs
4 Slices low fat Swiss Cheese
8 Tbsp Chopped cooked spinach, fresh preferred
4 Tbsp Grainy Mustard
2. Scramble eggs and cook in non-stick pan with cooking spray. Divide into 4 portions.
3. On each English Muffin place 1 slice of cheese, 1 Tbsp mustard, 1/4 of egg mixture and 2 Tbsp spinach.
