Sweet Roasted Pumpkin Seeds

Introduction

Since I'm watching my sodium I tried a new way to roast pumpkin seeds from my jackolantern this year, and they came out pretty good. Next year I might reduce the amount of sugar, to make it more diabetic friendly. Number of Servings: 7

Ingredients

    1 1/4 cup Pumpkin Seeds, from one good size pumkin
    3 Tbsp Sugar
    1 Tbsp Cinnamon

Directions

Pre-heat the oven to 350.
Spray some non-stick spray on a cookie sheet and set aside.
Mix together all the ingredients in a bowl until well combined. Pour the seed mixture on the cookie sheet and spread out. Bake in the oven for about 30 minutes or until brown.

Serving Size: Make 7 1/4 cup servings
