Pot Liquor Soup (for New year's Day or any day)

Number of Servings: 16


    2 lbs fresh collard greens
    1 (2 #) ham steak, chopped
    2 T hot sauce
    3 T olive oil
    3 med onions, chopped
    1 garlic clove, minced
    6 small turnips (or 6 red potatoes) diced
    2 (16 oz) cans field peas drained
    3 (14 oz) cans chicken broth
    2 (16 oz) cans crowder peas, drained
    2 culps water
    1/2 cup vermouth
    1 T white vinegar
    1 t salt


Remove and discard stems; rinse collards with cold water. Drain and tear into 1-inch pieces. Bring collards and water to cover to boil in a large Dutch oven. Remove fromm heat; drain. Repeat process once.
Toss together ham and hot sauce. Cook ham in hot oil in Dutch oven over med-high heat 8-10 minutes. Add onion and garlic and saute.
Stir in collards, potatoes, and remaining ingredients; bring to a bil. Reduce heat and simmer, stirring occasionally until turnips (or potatoes) are tender.
