LaRaine's Lite Bourbon Chicken

Ingredients

    2 lbs boneless chicken breasts, cut into bite-size pieces
    2 tablespoon extra light olive oil
    1 garlic clove, crushed
    .25 teaspoon ginger
    .75 teaspoon crushed red pepper flakes
    .25 cup apple unsweetened juice
    .25 cup splenda brown sugar blend
    2 tablespoons one carb ketchup
    1 tablespoon cider vinegar
    .5 cup water
    .33 cup lite soy sauce

Directions

Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.
Serve over hot brown rice for a complete meal
