Sweet and Sour Pork (Weight Watchers recipe)

    1 spray cooking spray
    1.5 pounds lean pork tenderloin, cut into small pieces
    1/2 cup water
    1/3 cup rice wine vinegar
    1/4 cup packed brown sugar
    2 tbs corn starch
    1/2 tablespoon salt
    2 medium green peppers, sliced
    1 small onion, sliced
    3 cups cooked rice


Coat a non-stick skillet with cooking spray over medium heat.

Add pork and cook until golden brown, about 8 to 10 minutes; remove from skillet and set aside. Drain fat from skillet.

Drain pineapple chunks and reserve juice; set aside.

Combine water, vinegar, sugar, cornstarch, salt, soy sauce, and reserved pineapple juice in small bowl. Add to skillet and cook until sauce is slightly thickened, about 2 minutes. Add pork, cover and cook over low heat until meat is tender, about 20 minutes, stirring occasionally.

Add peppers, onion, and pineapple chunks, cook 5 minutes more.

Serve over rice.

Serving Size: 1 cup pork plus 1/2 cup rice per serving (6)
