Fluffy Oat Bran Pancakes

Number of Servings: 1

Ingredients

    1/4 cup flour, wheat
    1/4 cup flour, white
    1/4 cup oat bran
    1/4 cup faxseed (ground)
    1 tsp baking powder
    1/4 tsp baking soda
    1/8 tsp salt
    1 tbsp packed brown sugar
    1 tbsp cinnamon
    1 tbsp canola oil
    1 cup milk (fat-free or soy)
    1 egg whites
    2 tbsp peanut butter
    1 tbsp honey

Directions

Add all dry ingredients to medium mixing bowl. Add oil and milk - mix until it is JUST consistent (do not over-mix)
Separate egg whites and beat with a hand mixer until forming stiff peaks.
Fold in eggs to the regular mixture (will be lumpy with parts of egg).
Spray skillet or pan with non-stick cooking spray.
Use 1/4 cup batter for each pancake.
flip after two minutes when edges start to dry and bubbles form on top, remove after 2 minutes - pancakes should be lightly browned .
Mix peanut butter and honey together, use to spread between pancakes (use a small amount for each pancake).
Add syrup if desired.

Variation: Add fresh or dried blueberries. Also can layer bananas in between pancakes or use as a topper.

Serving Size: Makes 12 4 inch diameter pancakes (3 per serving)
