Sweet potato apple bake with Chicken breast

Introduction


A sweet alternative to the standard mashed potatoes.

Ingredients


    chicken breasts - cut into 5 3 oz servings
    sweet potato peel on- 5 cups chopped into cubes
    apples - peel on - de cored and cut into slices
    carrots - 2 cups chopped
    consomme - 1 can
    plain Greek yogurt - 1/2 cup
    olive oil - 1 tbsp
    Cinnamon, nutmeg. ... spice to taste
    * could also use apple pie/pumpkin pie spice which is what I used since I was out of cinnamon

Directions


First steam the vegetables till they start getting soft
half cook the chicken breast with a little olive oil ( makes sure than after baking you have a thoroughly cooked chicken breast)

Mix the consomme and yogurt together with your spices
place vegetables and apples in a baking dish
place chicken breast on top
cover with consomme mixture
bake at 350 for about 20 minutes


Serving Size: Makes 5 servings - one 3 oz chicken breast and one cup of bake
