Chicken-n-Pepper Soup

Number of Servings: 6

Ingredients

    2 large cicken breasts- skin and bone removed
    1 1/2 tbsp olive oil
    3 green bell peppers
    1 red bell pepper
    1 onion
    2-3 cloves of garlic- approx 2 tsp.
    1 29 oz can crushed tomatoes
    4 cups chicken broth
    1-2 tsp chinese five spice
    2 tsp crushed basil leaves
    1 bay leaf
    3 tbsp shredded parmesan cheese
    salt and pepper to taste

Directions

Seed and dice the peppers and onions. Dice the garlic (though I often use the pre-diced garlic in the bottle). In a large stock pot, saute the peppers, onion, and garlic in the olive oil -about 7 minutes. add the chicken breasts, tomatoes, broth, five spice, basil, and bay leaves. Let come to a rolling boil and turn down the heat to med. Cover and cook for 20-25 minutes- or until the chicken is cooked. Remove the breasts to dice and then put them back in the soup. Season with salt and pepper to taste. To serve- put the soup in a bowl and top with parmesan cheese.
