Introduction

very fast abd delicious! use home-made stock and fresh tomatoes to cut down on the sodium. Skip on the turkey bacon and make it vegetarian! Ingredients

    1/2 large onion, chopped
    2 tbs garlic, minced
    1lb diced carrots
    1 package spinach
    3 cans Great Northern White Beans
    2 cups Chicken Stock
    1 can diced tomatoes
    1 tbs olive oil
    4 slices Turkey Bacon, chopped
    2 cups water

Directions

sautee onions and garlic in olive oil until golden, add carrots and chopped turkey bacon and sautee for 2 minutes, add chicken broth and water as well as the tomatoes, let cook for 20 minutes on medium heat. add beans and let cook for 15 minutes. Then add salt (to taste- you might not need to add any), pepper, and a pinch of sage. Also add spinach, and cook until welted. Serve with sour cream and corn bread.

Serving Size: makes 6 dinner bowls of soup
