Pumpkin muffins with golden raisins

Introduction

Number of Servings: 12

Ingredients

    1/3 c raisins, soaked in hot water for 5 minutes, then drained
    Dry:
    2 c flour
    2 tsp baking powder
    1/4 tsp baking soda
    1 tsp cinnamon
    3/4 tsp gr ginger
    1/8 tsp allspice
    1/8 tsp cloves
    1/2 tsp salt
    Wet:
    1 stick butter, melted & cooled
    3/4 c brown sugar, packed
    3/4 c pureed cooked pumpkin
    1/4 c buttermilk
    1 egg
    1/4 c egg beaters
    1 tsp vanilla

Directions

Soak raisins.
Preheat oven to 400 & prepare muffin pan.
Mix dry ingredients.
Mix wet ingredients.
Mix dry & wet ingredients together.
Stir in raisins.
Add to muffin cups.
Bake 20 minutes or until done.

Serving Size: Makes 12 muffins
