Spiced pumpkin soup

Introduction

lovely thick soup warming soup which is super quick to prepare lovely thick soup warming soup which is super quick to prepare
Number of Servings: 4

Ingredients

    pumpkin - 3/4 whole medium
    1 onion, roughly chopped
    1 tsp chilli - or to taste
    large garlic clove
    Kallo low sodium stock - 2 cubes made up to 1 litre
    Olive oil spray - say half tsp

Directions

spray bottom of pan with oil, add chopped onion and garlic
Stir till onion translucent
add pumpkin and stir for another 5 minutes
add stock and chilli
Simmer for 20 minutes then blend with a stick blender
Add salt and pepper to taste and serve

Serving Size: makes 4 servings
