1 tsp yellow mustard
2 T apple cider vinegar
1 cup olive oil
salt to taste
dash of cayenne pepper to taste
With blender still running at a low to med speed, add olive oil VERY slowly to egg mixture, 1 teaspoon at a time. Once mixture starts to emulsify, you can add remaining olive oil at a slightly faster rate, but be patient. Do not add oil too fast or you'll get a runny unemulsified mess.
NOTE: If you're using a VitaMix keep the speed very low, as you don't want to heat up this mixture.
