Curried Lentil Soup, Flaxmilk version

Introduction

Vegan except that the coconut flakes probably contain white sugar, some vegans eat this, others do not. If this bothers you, leave them out or substitute fresh grated coconut. Ingredients

    1 cup brown lentils
    1 cup red lentils
    2 cups vegetable broth
    7 cups water
    1 cup flaxmilk
    1/2 cup short grain brown rice
    1 Cup chopped celery
    1 onion
    4 cloves garlic
    1/2 Tbsp Olive oil
    2 Tbsp. bakers coconut
    1 1/2 tsp salt
    4 Tbsp yellow curry powder
    1Tbsp red curry powder
    dash of onion powder
    dash of garlic powder

Directions

Chop Onion, carrot, and celery, mince garlic, saute in bottom of pan with the olive oil until onion is caramelized.

Add the rest of the ingredients Bring to a boil and simmer for 50-60 minutes, or until brown lentils are soft and red lentils have dissolved into the broth.

Serving Size: Makes Thirteen 1 cup servings
