Introduction

I was looking for protein packed breakfast options because I was bored with eggs. Fluffy pancakes pack a protein punch with cottage cheese added in. I was looking for protein packed breakfast options because I was bored with eggs. Fluffy pancakes pack a protein punch with cottage cheese added in.
Number of Servings: 8

Ingredients

    3/4 cup of low fat (1%) cottage cheese
    2/3 cup of skim milk
    1 tsp vanilla extract
    1 tsp canola oil
    3/4 tsp baking powder
    3/4 tsp baking soda
    1 Tbs agave nectar
    3/4 cup whole wheat flour
    2 large egg whites
    2 Tbs ground flaxseed

Directions

In a large bowl, whisk flour, baking powder and baking soda.

Stir in cottage cheese, milk, egg whites, vanilla, and agave.

Heat canola oil over medium heat and drop batter into pan (1/4 cup per pancake).

Cook until bubbles appear on top, and flip.

Serving Size: Makes 8 pancakes
