Ingredients

*Purple Potato 3 potatoes
*Extra Virgin Olive Oil, 3 tbsp
I Can't Believe It's Not Butter, 2 Tbsp
Milk, 2%, 0.5 cup
*Kraft 2% Mild Cheddar Cheese, 5 oz
Ground Turkey, 1 unit, yield from 1 lb raw
Carrots, raw, 1 large
Onions, raw, 0.5 large
*Garlic Minced 1 Tsp, 3 serving
* Red Cooking Wine, 2 Tbsp
Directions
Scrub taters clean, chop into smaller pieces and boil. I leave the skin on because I like the texture and its good for you. Chop carrots, onions, and garlic to your liking and cook in a pan with olive oil. After a few minutes add turkey meat and cook until meat is finished.
When potatoes are done, allow to cool a bit and mash with fork or mixer, stirring in butter and milk. Place meat mixture on the bottom of your casserole dish, add red wine and mix. Follow with an even spreading of taters. Cover with cheese to your liking and back at 350 degrees for about 15 minutes or until the cheese is melted and crispy.
A little high in calories but easily adjusted with less butter or cheese and loaded with tons of vitamins, protein, and fiber.
