Margaret's Roasted Roots

Introduction

YUMMMMM!!!! Best I've ever tasted!! YUMMMMM!!!! Best I've ever tasted!!
Number of Servings: 2

Ingredients

    Carrots, raw, 5 carrot (7-1/2") peeled & sliced
    Parsnips, 1 parsnip (9" long) peeled & sliced
    Sweet potato, 1 medium, raw, peeled & bite size chopped
    Butternut Squash, 1 cup, cubes
    1 Large Onion Raw, cut into wedges
    Beets, fresh, 4 beet (2" dia) peeled & bite size chopped
    Extra Virgin Olive Oil, 2 tbsp
    Sea Salt & Pepper to taste

Directions

Preheat 2 large cookie sheets, or baking pans, in oven at 400 deg.
Prep all veggies, toss in a bowl with 1 tablespoon olive oil.
Drizzle 1 Tbsp olive oil on preheated pans, & then spread tossed veggies out over pans. (do not pile veggies on top of each other).
Roast uncovered for 30 minutes, stirring once half way through.
ENJOY!


Serving Size: makes 2 huge portions, or 4 medium portions.
