Slowcooker Chile Lime Fiesta Soup

Introduction

Number of Servings: 6

Ingredients

    1 can reduced sodium black beans, drained and rinsed under cold water for 1 minute
    1 can sweet yellow corn, drained and rinsed
    6 raw chicken breast tenderloins
    1 can diced, no salt added tomatoes with juice
    4 cups homemade, no salt added chicken broth
    2 cups water
    1/2 tsp coarse sea salt crystals
    freshly ground black pepper
    1 tbsp ground cumin
    2 cloves garlic minced
    1 medium sweet onion, diced
    1 anaheim chile pepper, seeded and cut into thin ribbons
    3 red chile peppers, seeded and cut into 3 ribbons
    zest of 1 lime
    juice of 2 limes
    handful of fresh cilantro chopped
    1 medium avocado, cut into 6 equal wedges then each wedge sliced into 2-3 slices

Directions

Combine the black beans, corn, chicken, tomatoes, chicken broth, water, salt, pepper, cumin, garlic, onion, chile peppers, lime zest, and lime juice in a slowcooker. Cover and cook on low for 8-10 hours. Turn the slowcooker off. Remove the chicken breast tenderloins and shred them with a fork. Return to the soup and mix well. Serve topped with a handful of fresh cilantro and avocado slices.

Serving Size: Makes 6 1.5-cup servings
