Low carb ham & cheese quiche

Introduction

Number of Servings: 6

Ingredients

    140g gammon, diced
    110g cheddar cheese, grated
    3 eggs
    150g double cream (or heavy cream)
    dash of black pepper
    1 tbsp chives (dry or fresh)

Directions

Arrange the cheese and gammon in a large greased pie plate. Beat the eggs, cream, pepper and chives well; pour over gammon. Bake at 350' for 35 minutes or until a knife inserted in the centre comes out clean. Let it stand for 10 minutes before serving.

Can be frozen and microwaved to use another day.

Serving Size: Cut into 6 pieces
